The tri-tip triangle roast is cut from the sirloin. This is a well-marbled, full-flavored, amazingly tender cut that roasts and grills even better!

Rumor has it, back in the 1950’s in Cali, a handful of butchers began to spit roast this cut alongside the burgers and it quickly began to be the new favorite hot food, hence the west coast “Santa Maria” style references when scoring through recipes.
